Ginger cream cheese frosting

Ground ginger and vanilla extract give this frosting an extra kick of smooth flavor. I originally concoted it as a companion to my Old-Fashioned Tomato Soup Cake, but it's just as at-home on any spiced cakes, cookies or muffins. Makes enough to cover and decorate a layer cake; halve the recipe if you only need to top a 9x13 cake.
