Cat in the hat sugar cookies with buttercream

In honor of my beloved Theodor Seuss Geisel's 107th birthday, I baked up a batch of chewy sugar cookies and some buttercream to celebrate! This is probably one of the best cookies I've ever tasted and easily the best buttercream I've ever made. Thanks to Dr. Seuss for being an inspiration.
