These are an amazing way to start your Sunday morning. You would never guess these are gluten-free, and in fact I'd have to say these are maybe the best muffins I have ever had(!) and certainly the best to come out of my kitchen.
Teff flour is the secret ingredient that gives these muffins a perfect crumb and texture - and a bright fresh lemon does the rest of the work in the flavour department.
