When yogurt is drained of its liquid, it becomes a soft, spreadable, slightly tart spreadable cheese that is wonderful served with crackers and fruit or rolled into balls and marinated in herbed olive oil. My favourite use for it though is as a replacement for cream cheese in cheesecakes. The result is a slightly lighter, tangy cheesecake that your family and guests will love!
