Peanut stew (or groundnut stew) is ubiquitous throughout West Africa. After doing some research, I came up with the recipe below. And I've got to tell you, it is really, really good. I will definitely be making this again. It is a typical Ghanian recipe, which is different from other variations because it includes hard boiled eggs (but feel free to omit them if that sounds a bit weird to you).
