Creamy cheese grits

Served with grilled shrimp, these grits are a lighter tasting alternative to the average Southern shrimp and grits. Cheddar and corn take the place of sausage to add flavor and texture. My husband and kids love it. I use the frozen corn when pinched for time, but it's sooo good with fresh cooked corn. Just add extra butter if using fresh corn.
