Almond cake

This Cook's Illustrated recipe has quickly become our favorite dessert. The cakes are subtly sweet, with a great, dense crumbly texture. I serve it with whipped cream and berries, but it would be great with a raspberry sauce. I buy almonds from Trader Joe's that are already sliced and toasted. The recipe makes two 4 1/2 inch cakes.
