A bar cookie, simple to make, with a wonderful crispness. Perfect for bake sales, classroom treats or holiday platters. It can be baked in a 9x13 pan, for a thicker cookie base. My mom used to have these ready for us when we got home from school, and it was my favorite after-school treat. It was one of the first things I learned to bake as a small girl.
