Pumpkin jack-o-lantern cookies

These cookies have been a tradition in my family since we first ate them at a friend's house. I made them every year for our children. I shared them with my co-workers who requested them, and they were sent to college with the neighbor boy each time he came home for a visit. They are cute, moist and remind us that Halloween should be enjoyed even if you aren't a child.
