Pavlova

The classic Australian dessert and a wonderful alternative to Christmas Pudding if you happen to be in the southern hemisphere in December. There is a rumour that a New Zealand chef created it but I've yet to see the evidence myself. Cue some noisy protestations from across the ditch... :-) This is the recipe my mum uses. She says the white vinegar is the secret ingredient for ensuring light and fluffy meringue.
