Layers of carrot cake, sweet pineapple cream cheese, coconut pudding and toasted coconut - It isn't too sweet, it isn't too heavy...maybe it is like Mary Poppins, practically perfect in every way! This recipe came out of a cooking malfunction - a cake that stuck to the pan. Tasted great, but didn't look so pretty. So put on my concocting hat and came up with this.
