While I was looking for ways to use up my leftover roasted chicken I came across the concept of a chicken salad sandwich. At its base, a chicken salad seems to be shredded cooked chicken mixed with mayonnaise. A lot of recipes also included celery and green onions. I decided to go with a basic sandwich for the first time. The chicken salad sandwich was easy to make and really good!
