Tofu and soy products in general gross a lot of people out. Even when I was a vegetarian I didn’t really eat a lot of tofu. But, that period in my life was ages ago. Now the vegetarian options seem to be more flavorful and less outlandish looking. Often times I feel like the makers of these vegetarian products are trying to make things look appealing to non-vegetarians. Because most devout vegetarians will eat this stuff regardless of its appearance and honestly do not want to eat something that reminds them of an animal product. As a part of my “year of no resolutions” and “being the best me I can be” I have decided to take meat out of the equation at least once a week and substitute with either more vegetables or a protein rich vegetarian substitute. Daring move, right? I promise there is enough flavor and protein in this dish that by the time you finish you won’t even be thinking about all the greasy animal goodness.
