This recipe is my version of roasted Hainanese Chicken. The rice is seasoned with the traditional Hainanese chicken marinade and chicken is placed on top of it then cooked normally. Then, the chicken is roasted in the oven until golden brown. Best served with chili sauce, ginger oil and oyster sauce.
